– 4 cups washed arugula/rocket
– 1 granny smith apple, sliced or chopped
– ¼ cup walnuts, chopped and toasted
– 2 tbsp toasted pumpkin seeds
– 2 tbsp fresh pomegranate seeds
– 2 tbsp extra virgin, organic olive oil
– 1 tbsp apple cider vinegar
– Celtic sea salt and pepper to taste
